RECIPE: Viridian Vegan Energy Balls

Makes approx 24 balls



•      2 cups walnuts
•      2 cups soft pitted dates
•      2 tbsp melted Viridian Nutrition Organic Raw Virgin Coconut Oil
•      1 tsp vanilla extract
•      2 capsules of Viridian Nutrition Organic Maca Root 
•      2 tbsp Viridian Nutrition D-Ribose Powder
•      3 to 4 tbsp organic ground almonds



1.      Soak dates in hot water for 10 minutes. In a large food processor fitted with an "S" blade, process the walnuts, then melt the coconut oil in a pan over a low heat.

2.      Once dates have softened, drain and add to the walnuts and process.  Add in the melted Viridian Nutrition Coconut Oil, vanilla extract, Viridian Nutrition Maca capsule contents and process until mixture forms a sticky dough. Empty contents into a bowl and add the Viridian Nutrition D Ribose powder to the dough and mix well.

3.      Scoop out approximately a heaped teaspoon of dough, roll between your hands to form an inch-sized ball, then roll into the organic ground almonds until the ball is fully coated.  

4.      Arrange on a baking sheet lined with parchment paper, then place in the fridge to set for at least an hour before serving.  .

5.      Store the balls in a sealed container in the fridge for up to a week. Enjoy!
